Cooking Steps

Voorbereiden

  • Breng water aan de kook in een pan met deksel voor het ei. 
  • Bereid de bouillon (zie Tip 1).
  • Kook het ei, afgedekt, 6 - 10 minuten (zie Tip 2).  

Tip 1: Let jij op je zoutinname? Bereid dan 150 ml bouillon per persoon en dat vul aan met 50 ml kokend water per persoon.

Tip 2: Houd je van een zachtgekookt ei? Kook het ei dan 6 minuten. Wil je een hardgekookt ei? Kook het ei dan 10 minuten.

  • Verhit de zonnebloemolie in een soeppan of grote pan met deksel op hoog vuur.
  • Fruit de mix van ui en knoflook en de groene currykruiden 1 minuut.
  • Voeg de groentemix toe en roerbak 3 - 4 minuten mee.
Soep afwerken

  • Voeg de bouillon toe en laat de soep 5 – 7 minuten zachtjes koken op middelmatig vuur.
  • Snijd ondertussen de koriander fijn.
  • Voeg in de laatste 3 minuten de udonnoedels, de kokosmelk en de Javaanse wokpasta toe aan de soep.
  • Pel ondertussen het ei en snijd doormidden.

Weetje: Naast vette vis is ei een van de weinige ingrediënten bomvol vitamine D. Een vitamine waar we gemiddeld te weinig van binnenkrijgen, helemaal doordat we tegenwoordig veel binnen werken.

  • Breng de soep eventueel op smaak met peper en zout (zie Tip).
  • Serveer de soep in kommen.
  • Garneer met de koriander en het gekookte eitje.

Tip: Houd je van een pittige soep? Voeg dan een lepeltje sambal toe!
