Schelvis heeft een zachte, sappige structuur die vraagt om een voorzichtige behandeling. Hij heeft wat weg van kabeljauw maar is verfijnder en sterker van smaak. Hierdoor kan de schelvis de zoete, lichtpittige mangochutney goed hebben. De sojasaus versterkt de smaak van de chutney en zorgt voor een oosterse tintje.

Cooking Steps

Voorbereiden

Kook 500 ml water per persoon in een pan met deksel voor de noedels. Snijd de rode ui in halve ringen en snijd de peen in dunne halve plakken. Snijd de snijbonen in dunne reepjes van ongeveer ½ cm.

Groenten bakken

Verhit de helft van de roomboter in een wok of hapjespan met deksel en bak de rode ui, peen en snijbonen 2 – 3 minuten op middelhoog vuur. Voeg 1 el water per persoon toe en smoor de groenten, afgedekt, 5 – 7 minuten. Voeg eventueel extra water toe als de peen te hard blijft.

Noedels koken

Kook ondertussen de noedels, afgedekt, 4 minuten in de pan met deksel. Giet af en laat zonder deksel uitstomen.

Schelvis bakken

Dep ondertussen de schelvisfilet droog met keukenpapier en verhit de overige roomboter in een koekenpan op middelmatig vuur. Bak de schelvisfilet ongeveer 2 minuten per kant. Breng op smaak met peper en zout.

Op smaak brengen

Voeg de noedels, de sojasaus en de helft van de mangochutney aan de groenten toe en breng op smaak met peper en zout.

Serveren

Verdeel de noedels over de borden. Serveer met de schelvisfilet en de overige mangochutney.
