Cooking Steps

Verwarm de oven voor op 200 graden. Kook water en bereid de bouillon door het benodigde aantal bouillonblokjes op te lossen in kokend water. Pel de ui en snijd fijn. Verwijder de onderste en bovenste cm van de prei, snijd in fijne ringen en was in een vergiet. Verwijder het groen van de bospeen, was de bospeen grondig of schil met een dunschiller en snijd in plakken. Was de aardappelen (eigenheimer) grondig of schil deze en snijd in blokjes.

Verhit de olijfolie in een soeppan met deksel en fruit de ui 3 minuten op middellaag vuur. Voeg de prei, bospeen en aardappel toe en bak 2 minuten mee. Schenk de bouillon bij de groenten en breng op smaak met peper en zout. Dek de pan af en laat 15 minuten zachtjes koken.

Snijd ondertussen het koningsbrood in plakken. Leg het brood op een ovenrooster met bakpapier en strooi de oude kaas erover. Bak het koningsbrood 6 - 8 minuten in de voorverwarmde oven.

Spoel de dille af en hak fijn. Haal de soep van het vuur, voeg de room toe en pureer in een blender of met een staafmixer. Voeg indien nodig extra kokend water toe om de soep naar wens vloeibaarder te maken. Roer ⅔ deel van de dille door de soep.

Verdeel de soep over soepkommen. Leg een snee koningsbrood in het midden van de kom en garneer met de achtergehouden dille. Serveer met het overige koningsbrood.
