Voorbereiden

Breng ruim water aan de kook in een pan met deksel voor de aardappelen. Verkruimel het groentebouillonblokje erboven. Breng in een tweede pan met deksel water aan de kook voor de spruitjes. Was of schil de aardappelen en snijd ze in grove stukken.

Koken

Kook de aardappelen 15 – 18 minuten, afgedekt, in de pan met bouillon. Kook de spruitjes in 6 – 8 minuten beetgaar in de andere pan. Giet de spruiten af en spoel af met koud water. Kook de laatste 5 minuten de mix van wortel en ui mee met de aardappelen. Giet daarna af en bewaar een beetje kookvocht.

Bakken

Verhit 1/2 el roomboter per persoon in een koekenpan met deksel op middelhoog vuur. Bestrooi de varkenshaas met peper en zout en bak 2 - 3 minuten per kant. Dek de pan af en bak nog 4 - 6 minuten. Haal de varkenshaas uit de pan en houd warm in aluminiumfolie. Voeg per persoon 1 - 2 el water en 1/4 bouillonblokje toe aan de koekenpan. Roer goed en kook 2 - 3 minuten in tot een jus. Bak ondertussen in een andere koekenpan de spekblokjes 3 - 4 minuten zonder olie of boter. Voeg vervolgens de spruitjes toe en bak 4 - 6 minuten. Blus af met 1/2 el witte balsamicoazijn per persoon en verhit nog 1 minuut.

Serveren

Stamp met een aardappelstamper de aardappelen en wortel tot een grove stamppot. Voeg per persoon: 1/2 el roomboter, 1 tl mosterd en een scheutje melk toe om het smeuïg te maken. Verdeel de hutspot en spruitjes over de borden. Leg de varkenshaas ernaast en schenk de jus erover.
