- Cut the onion into half rings.
- Crush or mince the garlic.
- Cut the eggplant in half lengthways, then slice into crescents. Cut the tomato in half and slice into crescents.
- Mix the red wine vinegar, honey and half of the onion in a small bowl.
- Heat a drizzle of olive oil in a frying pan over medium-high heat. Fry the eggplant for 6 - 8 minutes. Add the garlic during the last minute of cooking time and season with salt and pepper.
- Heat another frying pan over medium-high heat with a drizzle of olive oil. Fry the pork tenderloin tips and the rest of the onion with the Middle-Eastern spice mix for 4 - 5 minutes or until done.
- Grate the cucumber in the meantime and squeeze out the water. Transfer to a bowl.
- Roughly chop the fresh herbs.
- Crumble the feta.
- Add the yogurt, feta and chopped herbs to the cucumber. Season with salt and pepper and mix well.
- Heat the flatbread for 30 seconds per side in a clean frying pan over medium-high heat.

- Assemble the flatbread in the following order. Add the homemade tzatziki first, then the eggplant, pork gyros, tomato, and quick-pickled onion.
