Curry is een Aziatisch gerecht met veel variaties. Belangrijke ingrediënten zijn een combinatie van kruiden en rode peper. Roerbak de linzen met de currykruiden.

Verhit de zonnebloemolie in een wok of grote pan met deksel en roerbak de linzen en currykruiden 1 minuut op middelmatig vuur. Voeg 100 ml water per persoon, de kokosmelk en het groentebouillonblokje toe en breng, afgedekt, aan de kook. Kook op laag vuur in 25 minuten gaar.

Snijd of pers ondertussen de knoflook fijn. Verwijder de zaadlijsten van de rode peper en snijd fijn. Voeg direct toe aan de wok of grote pan.

Voeg de bataat toe.

Schil vervolgens de bataat en snijd in blokjes van 1 cm. Voeg na 10 minuten koken toe aan de wok of grote pan. Roer tussendoor een paar keer door.

Voeg de spinazie toe.

Scheur in de laatste 5 minuten de spinazie klein boven de wok of grote pan, zet het vuur iets hoger en laat al roerende slinken. Voeg eventueel extra water of kokosmelk toe als de curry te droog wordt.

Verdeel het gerecht over de borden.
