Wie burrito's lastig te eten vindt kan zijn hart ophalen – vanavond serveer je alle ingrediënten van een burrito namelijk in een bakje. Net zo lekker, maar een stuk makkelijker te eten. De kip breng je op smaak met guadalajara-kruiden, een typisch Mexicaans kruidenmengsel met onder andere jalapeño en komijn. Schijnt de zon? Dit gerecht kun je prima meenemen naar het park.

Koken en snijden

• Breng ruim water aan de kook in een pan met deksel voor de rijst. Kook de rijst, afgedekt, in 12 – 15 minuten gaar. • Halveer de rode puntpaprika, verwijder de zaadlijsten en snijd in dunne halve ringen. • Snijd de rode ui in halve ringen.

Kip bakken

• Verhit 1/2 el olijfolie per persoon in een koekenpan op middelhoog vuur. Voeg per persoon 1/2 tl van de Mexicaanse kruiden toe en bak 1 minuut. • Voeg de kipfiletstukjes en rode ui toe en bak 6 – 8 minuten, of tot ze de kipfiletstukjes gaar zijn. • Laat de zwarte bonen uitlekken in een zeef.

Bonen bereiden

• Verhit 1/2 el olijfolie per persoon in een andere koekenpan op middelhoog vuur. Bak per persoon 1/2 tl Mexicaanse kruiden 1 minuut en voeg dan de uitgelekte zwarte bonen toe. • Bak de bonen 3 – 4 minuten. Breng op smaak met peper en zout. • Snijd de limoen in partjes en snijd de koriander grof. Laat de mais uitlekken in een zeef.

Serveren

• Meng de rijst met de helft van de koriander en het sap van 1 limoenpartje per persoon. Breng de rijst op smaak met peper en zout. • Verdeel de rijst over kommen of diepe borden. Leg de rijst, kipfiletstukjes, bonen, puntpaprika en mais naast elkaar op de rijst. • Garneer met de rest van de koriander, de zure room en de overige limoenpartjes.
