Cooking Steps

Guacamole maken

  • Verwarm de oven voor op 180 graden.
  • Snijd de tomaat in blokjes. Snijd 1 sjalot en 1 teentje knoflook fijn.
  • Halveer de avocado, verwijder de pit en schil. Doe het vruchtvlees in een kom en prak goed.
  • Pers een halve limoen uit in de kom.
  • Voeg de tomaat, sjalot en knoflook toe aan de avocado. Breng op smaak met peper en zout en meng goed door.

 

Mangosalsa maken

  • Schil en snijd de mango in blokjes.
  • Snijd de overige sjalot en knoflook fijn.
  • Snijd de koriander fijn.
  • Meng de mango, sjalot, knoflook en de helft van de koriander in een kom. Pers een 1/2 limoen uit in de kom en breng op smaak met peper en zout.
Gehakt bakken

  • Snijd de paprika in blokjes. Snijd de bosui fijn en bewaar het groene deel apart in een kleine kom als garnering.
  • Verhit 1 el zonnebloemolie in een koekenpan op middelhoog vuur. Voeg de helft van het witte deel van de bosui toe en bak 2 - 3 minuten.
  • Voeg het gehakt toe en bak 3 - 4 minuten. Voeg dan de tomatenpuree, paprika, 1 zakje Mexicaanse kruiden (let op: pittig! Gebruik naar smaak) en sojasaus toe.
  • Giet de mais af. Voeg de mais en 2 el water toe aan de koekenpan en laat 6 - 8 minuten sudderen. Breng op smaak met peper en zout.

Garnalen maken

  • Verhit 1 el zonnebloemolie in een koekenpan op middelhoog vuur. Voeg de overige witte deel van de bosui toe en bak 2 - 3 minuten.
  • Voeg de garnalen en de overige van de Mexicaanse kruiden toe en bak 2 - 3 minuten.
  • Voeg 50 g crème fraîche en de overige van de koriander toe. Breng op smaak met peper en zout.
  • Snijd de overige halve limoen in partjes en bewaar apart. Pers de andere helft uit in de pan.
Toppings voorbereiden

  • Verwarm de tortilla’s in de voorverwarmde oven op 180 graden gedurende 2 - 4 minuten.
  • Leg de cheddar en de overige van de crème fraîche in aparte kleine kommen.
Serveren

  • Serveer het gehakt en de garnalen in serveerschalen in het midden van de tafel.
  • Doe hetzelfde met de guacamole en mango salsa, evenals de tortilla’s, crème fraîche, kaas, het groene gedeelt van de bosui en limoenpartjes.
  • Laat iedereen zijn eigen taco’s samenstellen en genieten!
