Snijd de rode ui in halve ringen en snijd de rode bieten in dunne plakken. Giet de linzen af.

Verhit de olijfolie in een koekenpan en bak de rode ui en rode bieten 3 – 4 minuten op middellaag vuur. Blus af met de helft van de zwarte balsamicoazijn en roerbak nog 1 minuut zodat het zuur van de azijn kan vervliegen.

Salade maken

Scheur de spinazie klein en meng met de linzen, rode ui en rode bieten in een saladekom.

Dressing maken

Maak een dressing van de extra vierge olijfolie, overige zwarte balsamicoazijn, honing, peper en zout en voeg toe aan de salade.

Salade afmaken

Snijd de peterselie fijn en voeg de helft, samen met de helft van de dana blue, toe aan de salade.
