Cooking Steps

Boil the rice

  • Crush or mince the garlic and boil the water in a pot or saucepan (see pantry for amount). Cook the rice for 12 - 15 minutes, then drain if necessary.
  • Spread the rice over a plate or cutting board and allow to cool.
  • Meanwhile, finely dice the cucumber.
  • Finely chop the scallions and separate the white part from the greens.
Fry the cabbage

  • Heat the sunflower oil in a wok or deep frying pan over medium-high heat. Fry the sweetheart cabbage with the white part of the scallions for 6 - 8 minutes. 
  • In a bowl, beat the eggs and season with salt and pepper.
  • Heat the olive oil in another frying pan over medium-high heat. Transfer the eggs to the pan so as to make an omelette.
  • Remove from the pan and then cut the omelette into ribbons.
Fry the rice

  • Stir the garlic, Korean-style spices, beansprouts, soy sauce and rice into the cabbage.
  • Fry for 2 - 3 minutes, leaving it mostly undisturbed.
  • Season to taste with salt and pepper.

  • In a bowl, combine the mayonnaise with the sweet chili sauce and the sesame seeds.
  • Stir the ketjap into the rice, then serve in bowls or deep plates.
  • Top with the omelette ribbons, crispy onions, scallion greens and cucumber.
  • Drizzle with the sesame-chili mayo or serve separately alongside.
