Cooking Steps

Aardappelen bakken
1

Snijd de aardappelen in partjes. Verhit in een hapjespan met deksel 1 el olijfolie per persoon en bak de partjes, afgedekt, 30 - 35 minuten op middelhoog vuur. Haal na 20 minuten het deksel van de pan. Schep regelmatig om. Breng op smaak met peper en zout. Strooi de laatste 5 minuten de geraspte kaas over de aardappeltjes en laat de kaas smelten. Schep de aardappelen niet meer om.

Radijsjes inmaken

Verwarm de oven op 200 graden. Verwijder het loof van de radijs en snijd de radijsjes in dunne plakjes. Meng in een kom per persoon: 1/2 el witte balsamicoazijn en 1/2 tl suiker met een snuf zout tot een dressing. Meng de radijs erdoor. Zet opzij en schep regelmatig om. Bak de broodjes 8 - 10 minuten af in de oven.

Paddenstoelen bakken

Scheur de paddenstoelen in draden van ongeveer 1/2 cm dik. Verhit 1/2 el roomboter per persoon in een koekenpan op middelhoog vuur. Voeg de paddenstoelen toe en bak ze in ongeveer 7 - 9 minuten goudbruin. Roer de paddenstoelen niet te vaak zodat er een mooi goudbruin korstje kan ontstaan.

Weetje: Wist je dat paddenstoelen een bron zijn van vitamine B2? Dit houdt je energie op peil en voorkomt ontstekingen. Vooral voor vegetariërs en veganisten is het belangrijk om erop te letten dat je genoeg van deze vitamine binnenkrijgt.

Barbecuemarinade maken

Pers de knoflook of snijd fijn. Meng in een kleine kom de barbecuesaus, knoflook en per persoon: 1/2 tl suiker, 1/2 el water en 10 ml sojasaus (zie Tip). Breng flink op smaak met peper en zout. Zodra de paddenstoelen goudbruin zijn, verlaag het vuur. Voeg dan de saus toe en meng door. Zet het vuur uit.

Tip: Houd je van pittig? Voeg dan nog wat chilivlokken toe aan de marinade.

Dragonmayonaise maken

Hak de dragon en bieslook fijn. Bewaar 1/3 van de bieslook apart. Meng in een kleine kom de dragon en bieslook met de mayonaise. Snijd de broodjes in de lengte doormidden.

Serveren

Besmeer de broodjes met de dragonmayonaise. Verdeel de pulled paddestoelen en de ingemaakte radijsjes over de broodjes. Serveer met de aardappelen met kaas. Garneer de broodjes en de aardappelen met de overige bieslook.
