Cooking Steps

Voorbereiden

  • Verwarm de oven voor op 210 graden.
  • Snipper de ui en pers de knoflook of snijd fijn. Verwijder de zaadlijsten van de rode peper (let op: pittig! Gebruik naar smaak) en snijd fijn. Snijd de wortel in kleine blokjes. Snijd de peterselie fijn.
  • Verhit de olijfolie in een hapjespan met deksel op middelhoog vuur en bak de wortel 3 - 4 minuten.
  • Voeg de ui, knoflook en rode peper toe en bak 2 minuten.
Groenten koken

  • Voeg de tomatenblokjes en de helft van de peterselie toe.
  • Verkruimel 1/4 groentebouillonblokje per persoon boven de pan.
  • Breng al roerend aan de kook en laat 5 - 7 minuten zachtjes koken zonder deksel (zie Tip). Breng op smaak met peper en zout.

Tip: Zorg ervoor dat de saus goed inkookt en laat zoveel mogelijk vocht verdampen - de eieren garen gemakkelijker in een dikkere saus.

  • Maak voor elk ei een kuiltje in het groentemengsel en breek de eieren hierin. Zorg dat de eieren diep in de saus liggen, onderin de pan. Bestrooi de eieren met peper en zout.
  • Verdeel de geitenkaas in stukjes over het geheel, dek de pan af en laat de eieren in 6 - 10 minuten stollen (zie Tip).
  • Haal de laatste 4 minuten het deksel van de pan, zet het vuur iets hoger en laat overtollig vocht verdampen.

Tip: De kooktijd van de eieren hangt af van je pan. Controleer de eieren tussendoor en pas eventueel de kooktijd aan op basis van jouw voorkeur.

  • Bak ondertussen het broodje 6 - 8 minuten in de voorverwarmde oven.
  • Verdeel de shakshuka over de borden.
  • Garneer met de overige peterselie en serveer met het broodje.

Weetje: Eet jij graag eiwitrijk? Dat kan ook zonder vlees of vis! Daar is deze maaltijd een goed voorbeeld van: door de eieren, kaas en het broodje krijg je per portie 30 gram eiwitten binnen. Dat staat gelijk aan bijna 150 gram vlees!
