Cooking Steps

  • Prepare the stock.
  • Heat a drizzle of olive oil in a large soup pot and fry the ginger-garlic-chili mix for 2 minutes on low heat. 
  • Meanwhile, chop the scallions.

  • Add the diced sweet potato and sliced carrot to the pot and fry for 2 minutes.
  • Halve the lime.
  • Add the scallions but reserve some of the green parts for garnish. Add the yellow curry spices and season with the salt and pepper. 
  • Fry for 1 minute, then and add the stock and the juice of halve a lime.

  • Let the soup boil for 15 minutes or until the vegetables are soft. 
  • Roughly chop the hot honey peanuts.
  • Use an immersion blender to process into a smooth soup. 
  • Add three quarters of the coconut milk. Add extra lime juice to taste with salt and pepper (see tip).

Tip: Feel free to add some extra stock if the soup is still too thick.

  • Serve the soup in bowls.
  • Drizzle with the remaining coconut milk.
  • Garnish with the hot honey peanuts and scallions.
