•Sautépan or large frying pan
- Boil plenty of salted water in a pot or saucepan and cook the pasta for 11 - 13 minutes, then drain and set aside.
- Chop the onion in the meantime.
- Heat a drizzle of sunflower oil in a large deep frying pan over medium-high heat.
- Fry the onion with the chorizo for 2 - 3 minutes.
- Halve the tomatoes and transfer to the frying pan, along with the bell pepper strips.
- Fry for 4 - 5 minutes, seasoning to taste with salt and pepper.
- Stir in the herbed cream cheese and half of the grated cheese.
- Allow to melt, then add the pasta and mix well to combine.
- Cook for 1 more minute over high heat, seasoning to taste with salt and pepper.
- Serve the pasta on plates.
- Garnish with the rest of the cheese.
- Finish with the guacamole.
