Cooking Steps

Aardappelen koken

  • Was de wortel en aardappelen grondig en snijd in grove stukken. Zet onder water in een pan en kook 5 minuten.
  • Snijd ondertussen de ui in halve ringen.
  • Snijd het steeltje van de rode peper (let op: pittig! Gebruik naar smaak). Rol de rode peper tussen je handen zodat de zaadjes eruit vallen. Snijd de peper in ringetjes.
  • Weeg de zuurkool af, giet af en spoel onder koud water.
Pecanstukjes roosteren

  • Voeg de zuurkool toe aan de wortel en aardappelen en kook 8 - 10 minuten verder (zie Tip). Giet daarna af en zet apart.
  • Verhit een koekenpan zonder olie op hoog vuur en rooster de pecanstukjes tot ze goudbruin zijn. Haal uit de pan en bewaar apart.

Tip: Het koken van de zuurkool maakt de smaak minder intens. Wil je de kenmerkende zure bite behouden? Kook de zuurkool dan minder lang mee met de aardappelen, of voeg hem rauw toe aan de puree in stap 5.

Spekreepjes bakken

  • Verwarm dezelfde pan op middelhoog vuur en bak de spekreepjes 2 - 3 minuten.
  • Voeg de ui, rode peper en vadouvan toe en bak 4 - 6 minuten verder.
  • Bereid de bouillon. Voeg de bouillon, mangoketchup en ketjap toe aan de pan.
  • Meng goed door en breng het geheel aan de kook. Breng op smaak met peper en zout.
Serveren

  • Stamp de aardappelen, wortel en zuurkool met een aardappelstamper tot een grove puree. Voeg de roomboter, mosterd en een scheutje melk toe en stamp goed door. Breng op smaak met peper en zout.
  • Verdeel de zuurkoolpuree over diepe borden.
  • Leg de spekreepjes in pittige mangosaus erbovenop.
  • Garneer met de geroosterde pecanstukjes.
