Voorbereiden

Verwarm de oven voor op 200 graden. Snijd de bosui in fijne ringen en bewaar het witte en groene gedeelte apart van elkaar. Pers de knoflook of snijd fijn. Verwijder de zaadlijsten van de rode peper (let op: pittig! Gebruik naar smaak) en snijd fijn. Meng in een grote kom het kipgehakt met de panko, de sojasaus en de helft van: de gomasio, gemberpuree, rode peper, knoflook en het witte gedeelte van de bosui. Kneed goed door en vorm tot een langwerpig brood.

Meng in een kleine kom de zoete Aziatische saus met de helft van de wittewijnazijn en 1/4 el zonnebloemolie per persoon. Leg het kipgehaktbrood in een ovenschaal en bestrijk met de helft van de saus. Bak 20 - 25 minuten in de oven. Haal het kipgehaktbrood uit de oven en verhoog de temperatuur naar 220 graden. Bestrijk het kipgehaktbrood met de overige saus en bak nog 8 - 10 minuten, of tot het gaar is.

Groenten snijden

Snijd ondertussen de wortel in halve maantjes en de puntpaprika in reepjes. Snijd de limoen in partjes.

Weetje: Wortel is een echte vitamine A bom. Deze vitamine is nodig voor de groei, een gezonde huid, haar en nagels en een goede werking van de ogen en het afweersysteem. Vitamine A vind je verder ook in boerenkool, spinazie, broccoli, ei en leverproducten.

Groenten bakken

Verhit 1/2 el zonnebloemolie per persoon in een wok of hapjespan met deksel op middelhoog vuur. Bak de overige gemberpuree, rode peper, knoflook en het witte gedeelte van de bosui 1 - 2 minuten. Voeg de currykruiden toe en bak 2 - 3 minuten. Voeg de puntpaprika en wortel toe en bak nog 2 - 3 minuten.

Saus maken

Blus af met de overige wittewijnazijn en de aangegeven hoeveelheid water. Voeg de kokosmelk toe, roer goed door en breng afgedekt aan de kook. Laat 10 minuten inkoken. Haal na 5 minuten het deksel van de pan en voeg de udonnoedels toe. Knijp er 1 limoenpartje per persoon boven uit en breng op smaak met peper en zout.

Serveren

Snijd het gehaktbrood in plakken. Verdeel de noedels met currysaus over diepe borden. Leg het gehaktbrood erop. Garneer het gehaktbrood met het groene gedeelte van de bosui en de overige gomasio. Serveer met de overige limoenpartjes.
