Was of schil de aardappelen en snijd in grove stukken. Zet de aardappelen onder water in een pan met deksel en kook, afgedekt, in 12 - 15 minuten gaar. Kook de spinazie in de laatste 2 minuten mee. Giet af en laat zonder deksel uitstomen.

Tip: Spinazie bevat veel voedingsstoffen, waaronder ijzer. IJzer is essentieel voor het vervoeren van zuurstof in ons lichaam, wat bijdraagt aan een energiek gevoel.

Groenten maken

Pers de knoflook of snijd fijn. Snipper de rode ui. Halveer de cherrytomaten. Verhit 1/2 el olijfolie in een koekenpan en fruit de rode ui 1 - 2 minuten. Voeg de cherrytomaten toe aan de pan en bak 3 - 4 minuten. Breng op smaak met peper en zout en houd apart tot verder gebruik. Pureer de knoflook, het basilicum en per persoon: 1/2 el olijfolie en 1 scheutje melk in een hoge kom met een staafmixer.

Kabeljauw bakken

Dep de kabeljauw droog met keukenpapier en wrijf in met peper en zout. Verhit 1/2 el roomboter per persoon in dezelfde koekenpan van de tomaten op middelhoog vuur en bak de vis 1 - 2 minuten per kant. Stamp de aardappelen en spinazie met een aardappelstamper tot een fijne puree. Voeg 1/2 el roomboter per persoon en het basilicummengsel toe en stamp goed door. Breng op smaak met peper en zout.

Schep de puree op een bord. Serveer de kabeljauw en cherrytomaten ernaast.
