- Preheat the oven to 200°C.
- Cut the eggplant into rounds of 1cm thickness.
- Transfer to a parchment-lined baking sheet and drizzle lightly with olive oil. Scatter over the za'atar and season with salt and pepper.
- Roast the eggplant in the oven for 15 – 18 minutes.
- Dice the cucumber.
- Mince or finely grate a quarter garlic clove per person (see Tip).
- In a small bowl, combine the yogurt with the garlic and half of the cucumber.
- Season to taste with salt and pepper.
Tip: if preferred, you can use more garlic.
- Cut the pork into thin strips.
- Heat a light drizzle of olive oil in a frying pan over medium-high heat. Fry the pork with the Greek-style spices for 3 – 5 minutes, or until done.
- Meanwhile, roughly chop the cashews.
- Dice the tomato.
- Serve the lettuce on plates and drizzle with the extra virgin olive oil and balsamic vinegar. Top with the tomato, the eggplant, the pork and the rest of the cucumber.
- Dollop the yogurt sauce in the middle, then crumble over the cheese.
- Garnish with the cashews to finish.
