Krieltjes bakken
1

Verhit 1/2 el olijfolie per persoon in een hapjespan met deksel. Voeg de halve krieltjes toe en bak, afgedekt, 8 minuten. Haal het deksel van de pan, breng op smaak met peper en zout en bak nog 3 minuten. Haal van het vuur en meng er de tomatentapenade doorheen.

Meng in een saladekom per persoon: 1/2 el extra vierge olijfolie, 1 el witte balsamicoazijn, peper en zout. Snijd de komkommer en pruimtomaat in blokjes. Snijd de little gem in reepjes. Snijd de rode ui in halve ringen. Voeg alles toe aan de saladekom en meng met de dressing.

Tip: Liever geen rauwe ui door de salade? Bak de rode ui dan mee met de feta in de volgende stap.

Feta bakken

Strooi de bloem in een diep bord. Snijd per persoon 2 stukken feta af van 25 gram. Haal de stukken feta door de bloem, zodat ze volledig bedekt zijn met een laagje bloem. Verhit 2 el olijfolie per persoon in een koekenpan op hoog vuur. Voeg de feta toe aan de koekenpan zodra de olie goed heet is en bak de feta in 2 - 3 minuten per kant goudbruin.

Verdeel de gebakken krieltjes en de salade over de borden. Serveer de gebakken feta op de salade. Garneer de salade met de olijven.
