De oranje peen is de meest voorkomende peen, maar ook de minder bekende paarse en gele varianten zie je steeds vaker. Van oorsprong is de wortel zelfs wit van kleur. Volgens de overlevering ontwikkelden Hollandse boeren in de 18e eeuw een voorkeur voor de oranje wortels als steunbetuiging voor het koningshuis. Een leuk weetje, maar uit onderzoek blijkt dat de wortel al veel langer oranje is!

Cooking Steps

Aardappelen bakken

Verwarm de oven voor op 200 graden. Schil de aardappelen of was ze grondig en snijd in parten. Verhit per persoon 1 el olijfolie in een hapjespan met deksel en bak de aardappelen 25 – 35 minuten, afgedekt, op middelhoog vuur. Haal na 20 minuten de deksel van de pan. Schep regelmatig om en breng op smaak met peper en zout.

Peen roosteren

Snijd ondertussen de gele, paarse en oranje peen in dunne plakjes. Leg de plakjes peen op een bakplaat met bakpapier en besprenkel met de overige olijfolie, de gedroogde tijm en peper en zout naar smaak. Rooster de peen in 20 – 25 minuten gaar in de voorverwarmde oven.

Pers ondertussen de knoflook of snijd fijn. Hak de bladpeterselie grof.

Fetadressing maken

Meng de feta met de yoghurt, de knoflook en peper naar smaak in een hoge kom. Pureer met een staafmixer tot een gladde saus.

Vis in de oven

Haal ondertussen het plastic van het bakje gekruide koolvis. Bedek het bakje met aluminiumfolie en zet de vis de laatste 10 – 14 minuten bij de peen in de oven.

Serveren

Serveer de vis met de gebakken aardappelen en de geroosterde gekleurde peen. Garneer met de fetadressing en de bladpeterselie.
