Cooking Steps

Boil the pasta

  • Boil plenty of salted water in a pot or saucepan and cook the pasta for 11 - 13 minutes, then drain and set aside.
  • Chop the onion in the meantime.
Fry the chorizo and vegetables

  • Heat a drizzle of sunflower oil in a large deep frying pan over medium-high heat.
  • Fry the onion with the chorizo for 2 - 3 minutes.
  • Halve the tomatoes and transfer to the frying pan, along with the bell pepper strips.
  • Fry for 4 - 5 minutes, seasoning to taste with salt and pepper.
Finish the sauce

  • Stir in the herbed cream cheese and half of the grated cheese.
  • Allow to melt, then add the pasta and mix well to combine.
  • Cook for 1 more minute over high heat, seasoning to taste with salt and pepper.
Serve

  • Serve the pasta on plates.
  • Garnish with the rest of the cheese.
  • Finish with the guacamole.
