Breng ruim water aan de kook in een pan met deksel voor de rijst. Snijd of rasp de gember en de knoflook fijn. Snijd de biefstukpuntjes in reepjes van dezelfde grootte zodat ze gelijk garen. Meng in een kom de olijfolie, suiker, sojasaus, gember, de helft van de knoflook en biefstukreepjes. Laat de smaken intrekken.

Voeg de jasmijnrijst toe aan de pan met deksel en kook de rijst 12 - 15 minuten. Giet af en laat uitstomen. Verwijder de zaadlijsten van de rode peper en snijd fijn. Snijd de kastanjechampignons in kwarten. Snijd de bosui in fijne ringen en bewaar het witte en groene gedeelte apart van elkaar.

Tip: Let op, de rode peper is pittig! Houd je niet van pittig, of eten er kinderen mee? Gebruik dan naar smaak minder rode peper of houd apart.

Bakken

Verhit de helft van de zonnebloemolie in een koekenpan op middelhoog vuur. Bak de kastanjechampignons met de rode peper en het witte deel van de bosui 4 - 6 minuten. Breng op smaak met peper en zout. Verhit de andere helft van de zonnebloemolie in een wok of hapjespan met deksel op middelhoog vuur. Voeg de knoflook en spitskool toe en bak 5 - 8 minuten afgedekt. Voeg de zoete Aziatische saus toe en verwarm nog kort zonder deksel.

Voeg de biefstukreepjes met marinade toe aan de pan met kastanjechampignons. Bak de biefstukreepjes met marinade 2 - 4 minuten. Verdeel de rijst over kommen of diepe borden en schep de biefstukreepjes met kastanjechampignons en spitskool op de rijst. Garneer met groene gedeelte van de bosui.

Tip: Wist je dat spitskool rijk is aan calcium, ijzer en vitamine C? Dat levert een hoop gezondheidsvoordelen op in één keer - zoals sterke botten en tanden en gezonde spieren door de calciumboost.
