Cooking Steps

  • Prepare the stock.
  • Melt a knob of butter in a pot or saucepan. Add the turmeric and fry for 1 minute until fragrant. Add the rice and stock (see pantry for amount) and simmer for 8 - 11 minutes.
  • Crush or mince the garlic.
  • Cut the courgette in crescents.

  • Melt a knob of butter in a frying pan over medium-high heat and fry the chicken breast for 2 minutes per side.
  • Reduce the heat and fry for a further 2 minutes or until done.
  • Cut the chicken into bite-sized strips.
  • Heat the olive oil in another frying pan over medium-high heat. Fry the courgette together with half of the garlic and oregano for 3 - 4 minutes. Season to taste with salt and pepper.

  • In the meantime, dice the cucumber and the tomato.
  • Roughly chop the parsley.Cut the lemon into wedges.
  • In a small bowl, combine the yogurt, mayonnaise, and the rest of the garlic.
  • Squeeze in one lemon wedge per person and mix everything. Season to taste with salt and pepper.

  • Serve the rice, chicken, courgette, cucumber, tomato, yogurt sauce, parsley and lemon wedges family style and let everybody assemble their own plate.
