- Boil plenty of water in a pot or saucepan and cook the rice for 12 - 15 minutes, then drain and set aside.
- Heat a drizzle of sunflower oil in wok or deep frying pan over medium-high heat.
- Fry the vegetable mix for 5 - 7 minutes. Season with salt and pepper.
- Heat a light drizzle of sunflower oil in a frying pan, and fry half of the eggs. Season to taste with salt and pepper.
- Remove and set aside, keeping warm under aluminium foil.
- Heat a drizzle of sunflower oil in the same frying pan over high heat.
- Fry the pork strips for 2 - 3 minutes, or until done. Season with salt and pepper to taste. In the last minute of cook time, add half of the ketjap.
- In a bowl, whisk the rest of the eggs.
- Move the vegetables to the side and fry the whisked eggs for 2 - 3 minutes until scrambled.
- Reduce the heat to medium, then add the nasi-bami spice mix, the oyster sauce and the cooked rice and cook, tossing until fragrant, 1 minute. Season with salt and pepper.
Did you know.. eggs are one of the few ingredients that are rich in vitamin D, which aids with calcium absorption. Many of us however don't get enough vitamin D, particularly during the darker winter months.
- Serve the fried rice in deep plates.
- Top with the babi ketjap and the fried egg.
