Cooking Steps

Voorbereiden

Breng ruim water met een flinke snuf zout aan de kook in een pan met deksel voor de pappardelle. Snijd de prei in dunne ringen en snipper de ui. Pers de knoflook of snijd fijn.

Prei bakken

Verhit 1/2 el olijfolie per persoon in een hapjespan met deksel op middelhoog vuur. Bak de knoflook, ui en prei 4 - 5 minuten aan op hoog vuur. Blijf goed roeren. Kook de pappardelle 4 - 6 minuten in de pan met deksel. Giet af en laat uitstomen zonder deksel.

Saus afmaken

Voeg de slagroom toe aan de prei en verbrokkel 1/4 bouillonblokje per persoon boven de pan. Dek af en laat 5 - 7 minuten op laag vuur stoven. Voeg de laatste 2 minuten de spinazie toe en dek opnieuw af. Voeg vervolgens de vis toe. Roer de helft van de kaas door de saus en verhit opnieuw 2 - 3 minuten. Snijd de citroen in partjes en knijp 1/4 citroen per persoon uit in de saus. Breng flink op smaak met peper en zout.

Snijd de verse kruiden fijn. Verdeel de pasta over de borden en schep de prei-spinaziesaus met vis erover. Garneer met de bieslook, dille, de overige kaas en de citroenpartjes.
