- Boil plenty of salted water in a large pot or saucepan. Cut the head of the broccoli into small florets and finely dice the stem.
- Cook the pasta for 6 - 8 minutes, then add the broccoli and cook for 4 - 6 more minutes. Drain and set aside.
- Prepare the stock. Chop the onion and crush or mince the garlic.
- Chop the fresh herbs, making sure to keep them separate.
- Melt a knob of butter in a deep frying pan over medium-high heat. Fry the garlic and the onion for 2 minutes, then whisk in the flour.
- Pour in a third of the stock and whisk continuously to incorporate, then repeat twice more with the rest of the stock so as to make a smooth sauce.
- Bring to the boil, then allow to thicken and reduce for 1 - 2 minutes.
- Stir in the cream and the oregano (see Tip).
- Allow to simmer until serving. Season to taste with salt and pepper.
- Melt a small knob of butter in a frying pan over medium-high heat.
- Fry the mince with the Sicilian-style herbs for 3 minutes. Season with salt and pepper.
Health Tip: if you're watching your calorie intake, substitute the cream for milk or stock and allow to simmer for more time.
- Roughly chop the almonds. Quarter the lemon.
- Transfer the pasta and the broccoli to the sauce, then mix well to combine.
- Serve the pasta on deep plates. Top with the mince and garnish with the basil.
- For parents: garnish with the almonds and the pesto cheese cubes. Serve the lemon wedges alongside.
