Breng ruim water met een flinke snuf zout aan de kook in een pan met deksel voor de farfalle. Snijd de aubergine in kleine blokjes van 1 - 2 cm. Meng in een kom de blokjes aubergine met 1/2 el bloem per persoon. Verhit 1 el olijfolie per persoon in een koekenpan op middelhoog vuur. Bak de aubergine in 10 - 12 minuten rondom bruin.

Varkenshaaspuntjes bakken

Weeg de farfalle af en kook, afgedekt, 10 - 12 minuten. Giet af en laat zonder deksel uitstomen. Pers de knoflook of snijd fijn. Verhit 1/2 el olijfolie per persoon in een hapjespan met deksel op middelhoog vuur. Fruit de ui, knoflook en paprika 1 minuut. Voeg de varkenshaaspuntjes toe en bak 2 - 3 minuten.

Tip: Let jij op je calorie-inname? Weeg dan 60 gram pasta af per persoon en gebruik de helft van de slagroom.

Saus maken

Blus de varkenshaaspuntjes af met 1/2 el zwarte balsamicoazijn per persoon en de slagroom. Voeg de tijm, tomatentapenade en de farfalle toe en verbrokkel er 1/4 bouillonblokje per persoon boven. Verhit het geheel, afgedekt, 3 - 4 minuten op laag vuur.
