Cooking Steps

Voorbereiden

Verwarm de oven voor op 200 graden. Breng ruim water aan de kook in een pan met deksel. Bereid de bouillon. Snipper de sjalot, snijd de bladpeterselie fijn en halveer de rode cherrytomaten. Pers de citroen uit. Pers de knoflook of snijd fijn.

Bakken en koken

Meng de cherrytomaten met de zwarte balsamicoazijn, bruine suiker, knoflook en olijfolie in een ovenschaal. Breng op smaak met peper en zout en bak de cherrytomaten 20 – 25 minuten in de oven. Kook ondertussen de pappardelle, afgedekt, 4 – 6 minuten in de pan met deksel. Giet daarna af en laat zonder deksel uitstomen.

Tip: Trek de pappardelle voorzichtig van elkaar voordat je ze kookt. Zo gaart de pasta beter!

Kip bereiden

Leg ondertussen een stuk bakpapier of plasticfolie over de kipfilet. Sla de kipfilet met een koekenpan plat zodat hij overal even dik is. Haal het papier of de folie weg en bestrooi de kipfilet met peper en zout. Verhit 1/2 el roomboter per persoon in een hapjespan op middelhoog vuur en bak de kipfilet 3 – 4 minuten per kant. Haal uit de pan en bewaar onder aluminiumfolie.

Tip: Probeer de dikte van de kipfilet overal hetzelfde te krijgen, dan gaart de filet gelijkmatiger en blijft hij sappig.

Broccolini stoven

Verhit de 1/2 el zonnebloemolie per persoon in een koekenpan met deksel op middelhoog vuur. Fruit de helft van de sjalot 1 – 2 minuten. Leg dan de broccolini in de pan en voeg 2 el water per persoon toe. Dek de pan af en stoof in 10 – 12 minuten gaar. Verhit ondertussen de hapjespan van de kip, zonder extra bakvet, op middelhoog vuur. Bak de rest van de sjalot 1 - 2 minuten. Voeg 1/2 el citroensap per persoon, de bouillon en de kappertjes toe en laat 3 - 4 minuten zachtjes inkoken.

Haal de hapjespan van het vuur en roer er 1/2 el roomboter per persoon door. Voeg de cherrytomaten en de helft van de bladpeterselie toe. Schep de pappardelle er voorzichtig doorheen en breng op smaak met peper en zout.

Serveren

Verdeel de pappardelle over de borden en leg de broccolini ernaast. Leg de kipfilet op de pappardelle en garneer met de overige bladpeterselie.
