Cooking Steps

Voorbereiden

Bereid de bouillon. Weeg de juiste hoeveelheid bloemkool af. Hak 1/3 van de bloemkool fijn. Snijd de overige bloemkool in kleine roosjes en de steel in kleine blokjes. Snipper de ui, pers de knoflook of snijd fijn en rasp de gember met een fijne rasp.

Rijst bereiden

Verhit 1/2 el roomboter per persoon in een pan met deksel op middelhoog vuur. Voeg de helft van de knoflook, de helft van de gember en de fijngehakte bloemkool toe. Bak 2 minuten. Voeg dan de rijst toe en schep goed om. Voeg de bouillon en de kurkuma toe en breng aan de kook. Kook het geheel, afgedekt, in 10 - 12 minuten droog. Voeg extra water toe als de rijst te snel droogkookt.

Tip: 1. Let jij op je calorie-inname? Kook dan alle rijst, maar gebruik 2/3 ervan in dit gerecht. De overige rijst kun je de volgende dag in een lunchsalade verwerken.

  1. Let op dat je de aangegeven hoeveelheid kurkuma gebruikt. Als je te veel toevoegt, wordt de rijst bitter.

Bloemkool bakken

Breng ruim water met een snuf zout aan de kook in een pan met deksel voor de overige bloemkool. Kook de overige bloemkool, afgedekt, 5 minuten. Giet af. Voeg 1/4 el roomboter per persoon toe aan de bloemkool en breng op smaak met peper en zout. Zet de pan opnieuw op het vuur en bak de bloemkool 5 minuten, tot hij goudbruin kleurt.

Saus maken

Verhit ondertussen 1/2 el zonnebloemolie per persoon in een hapjespan met deksel op middelhoog vuur. Bak de ui, de overige knoflook, de overige gember en 1 tl garam masala per persoon 3 minuten. Voeg de tomatenpuree en tofublokjes toe en bak 1 minuut. Blus af met 1/2 el wittewijnazijn per persoon en de kokosmelk. Roer goed door en laat, afgedekt, nog 5 minuten zachtjes stoven.

Koriander snijden

Snijd de koriander, inclusief de steeltjes, grof.

Verdeel de kurkumarijst over diepe borden en schep de tofucurry erop. Leg de bloemkool erop en garneer met de koriander.

Tip: Bloemkool is rijk aan calcium voor sterke botten en tanden, vitamine C voor de weerstand, kalium voor een gezonde bloeddruk en vezels voor onder andere gezonde darmen.
