Voorbereiden

Bereid de bouillon en verwarm de oven voor op 210 graden. Snipper de ui en pers de knoflook of snijd fijn. Snijd de bloem van de broccoli in roosjes en de steel in blokjes. Was of schil de aardappelen en snijd in gelijke stukken.

Tip: Let jij op je zoutinname? Gebruik dan een half bouillonblokje per persoon voor 500 ml kokend water.

Verhit een koekenpan, zonder olie, op middellaag vuur en rooster de zonnebloempitten tot ze beginnen te poffen. Haal uit de pan en bewaar apart.

Verhit de roomboter in een soeppan met deksel en fruit de ui, de helft van de knoflook en de tijm 3 minuten op middelhoog vuur. Voeg de bouillon, broccoli en aardappel toe. Breng aan de kook en kook, afgedekt, 14 -18 minuten op middellaag vuur.

Snijd ondertussen de ciabatta open en besmeer met de olijfolie en de overige knoflook. Bak 6 minuten in de oven.

Haal de soeppan van het vuur en pureer de soep met een staafmixer. Roer de kruidenroomkaas erdoor en breng op smaak met peper en zout. Voeg eventueel extra water toe als je de soep wilt verdunnen.

Serveren

Verdeel de soep over diepe borden of kommen. Garneer met de zonnebloempitten en de danablu. Serveer de soep met het knoflookbrood.

Tip: Danablu is een pittige blauwe kaas en is sterk van smaak. Laat voor de perfecte balans iedereen zijn eigen soep garneren.
