Cooking Steps

Ui pekelen

  • Verwarm de oven voor op 180 graden (zie Tip 1).
  • Snijd de ui in dunne halve ringen.
  • Meng de helft van de ui in een kom met 1 el rodewijnazijn per persoon en een snuf zout (zie Tip 2).
  • Bewaar apart en schep af en toe om.

Tip 1: Je kunt de tortilla's ook kort verwarmen in de magnetron of een koekenpan. De oven hoeft in dit geval niet voorverwarmd te worden en de aluminiumfolie heb je dan ook niet nodig.

Tip 2: Je kunt ook een snuf suiker toevoegen om de ui en het zuur iets milder te maken.

  • Snijd de tomaat in kleine blokjes.
  • Snijd de verse koriander fijn.
Bakken

  • Verhit 1/4 el olijfolie per persoon in een koekenpan op middelhoog vuur.
  • Voeg de overige ui en de Mexicaanse groentemix toe en bak 6 - 8 minuten.
  • Voeg het rundergehakt toe en bak in 3 - 5 minuten los.
  • Verpak ondertussen de tortilla's in aluminiumfolie en verwarm 2 - 3 minuten in de oven.
Serveren

  • Zet het gehakt-groente mengsel in een kom op tafel.
  • Zet ook de tomatenblokjes, de koriander en de gepekelde ui op tafel.
  • Verdeel de tortilla's over de borden en laat iedereen zijn eigen tortilla vullen.
  • Serveer met de smokey tomatenketchup en de avocadodip.
