Cooking Steps

Prepare

  • Prepare the stock in a large bowl.
  • Add the couscous, BBQ spice rub* and raisins, then cover and set aside for 8 minutes.
  • Stir in the white wine vinegar and season to taste with salt and pepper.
  • Meanwhile, thoroughly wash the sweet potato and then dice it into 1cm cubes. Chop the onion.

*Take care, this ingredient is spicy! Use as preferred.

Microwave the sweet potato

  • Transfer the sweet potato, the onion and a knob of butter to a large microwave-safe bowl.
  • Add half of the water (see pantry for amount). Cover with plastic wrap and pierce the surface several times.
  • Microwave on high for 4 - 5 minutes, or until the sweet potato is soft.
  • Season with salt and pepper, then mix well and set aside.
Prepare the toppings

  • In a small bowl, combine the Peruvian-style spices with the mayonnaise and the rest of the water (see pantry for amounts).
  • Roughly chop the almonds.
  • Crumble the Greek-style cheese (see Tip).

Health tip: this recipe is high in calories. If you're watching your calorie intake, use just half of the cheese and keep the rest to use another time.

  • Cut the lemon into wedges and slice the cucumber.
  • Serve the lettuce and couscous on deep plates. Top with the bell pepper strips, the cucumber, the sweet potato, the onion, the lemon wedges and the Greek-style cheese.
  • Garnish with the almonds and drizzle with the sauce to finish.
