Cooking Steps

Voorbereiden

Verwarm de oven voor op 180 graden. Snijd de komkommer in de lengte en daarna in plakjes. Meng in een kom per persoon: 1 el wittwijnazijn, 1/2 tl suiker en een snuf zout. Voeg de komkommer toe en meng goed door. Pers of snijd de knoflook fijn. Rasp de gember fijn. Meng in een kom de helft van de knoflook en gember. Voeg per persoon: 1 el sojasaus en 1/2 el olijfolie toe en meng goed. Leg de varkenshaas in de marinade en laat marineren op kamertemperatuur tot gebruik.

Saus maken

Verhit 1/2 el olijfolie per persoon in een hapjespan op middelhoog vuur. Voeg per persoon: 1/2 tl geraspte gember, 1/2 tl garam masala (let op: pittig! Gebruik naar smaak) en de overige knoflook toe en bak 1 - 2 minuten. Voeg de passata, de overige sojasaus en per persoon: 1 tl zoetzure-komkommermarinade en 1 tl bruine suiker toe. Laat het geheel 6 - 9 minuten sudderen en inkoken.

Varkenshaas bakken

Verhit een koekenpan zonder olie op hoog vuur. Leg de varkenshaas in de pan, maar laat de marinade in de kom. Bak de varkenshaas 6 - 8 minuten en keer regelmatig om zodat alle kanten mooi dichtschroeien.

Paksoi bereiden

Bak de bao-broodjes 4 - 5 minuten in de oven. Breng ondertussen een laagje water met een snuf zout aan de kook in een hapjespan met deksel voor de paksoi. Snijd de paksoi in de lengte doormidden. Voeg de paksoi toe en kook, afgedekt, 1 - 2 minuten op hoog vuur. Giet het water voorzichtig af en voeg daarna de marinade van de varkenshaas en de sojabonen toe. Bak de marinade en sojabonen nog 2 - 3 minuten mee met de paksoi en zet dan het vuur laag.

Varkenshaas snijden

Haal de gebakken varkenshaas uit de pan en leg op een snijplank. Snijd de varkenshaas in plakjes, voeg toe aan de pan met de saus en meng goed door.

Serveren

Vul de bao-broodjes met wat van de zoetzure komkommer en het varkensvlees met saus. Verdeel de broodjes over de borden. Serveer met de stukken paksoi, de sojabonen en de overige komkommer. Garneer de komkommer met het zwarte sesamzaad.
