Cooking Steps

Prepare

  • Boil plenty of water in two pots or saucepans for the spaghetti and the broccoli.
  • Cook the spaghetti for 10 - 12 minutes. Reserve some of the pasta water, then drain and set aside.
  • Cut the head of the broccoli into small florets and dice the stem.
  • Boil the broccoli for 5 - 7 minutes, then drain and set aside. Season with salt and pepper.
Fry the shrimp

  • Zest the lemon and then cut it into wedges. Dice the tomato.
  • Heat a drizzle of olive oil in a deep frying pan over medium-high heat and fry the shrimp for 2 - 3 minutes.
  • Add the juice of one lemon wedge per person and fry for 1 more minute, or until done.
  • Season to taste with salt and pepper, then transfer to a bowl.
Make the sauce

  • Fry the garlic and onion in the same frying pan for 1 - 2 minutes.
  • Add the Sicilian-style herb mix and fry for another 1 - 2 minutes.
  • Add the cream and crumble in the stock cube (see pantry for amount). Allow to reduce for 1 minute. Add a splash of the reserved pasta water as necessary if the sauce is too thick.
  • Add the spaghetti and cook for 1 minute. Season to taste with salt and pepper.
Serve

  • Serve the spaghetti in bowls or deep plates.
  • Serve the broccoli, shrimp, lemon wedges, lemon zest, tomato and arugula in separate bowls.
  • Allow everyone to build their own spaghetti bowls as preferred.
