- Melt a knob of butter in a frying pan over medium-high heat and fry the chicken breast for 2 minutes per side. Reduce the heat and fry for a further 4 minutes per side or until done. Remove from the pan and let rest under aluminium foil.
- Heat a clean frying pan over medium-high heat and fry the gnocchi for 6 - 8 minutes, or until crispy. Remove from the pan and set aside.
- Heat a drizzle of olive oil in a large frying pan over medium-high heat and fry the bacon for 1 - 2 minutes.
- Meanwhile, chop the onion.
- Add the onion and fry for another 1 - 2 minutes.
- Meanwhile, halve the mini Roma tomatoes.
- Add the tomato paste and Sicilian-style herb mix and fry for 1 minute.
- Stir in the cream and let simmer until the chicken is done. Season with salt and pepper to taste.
- Add the tomatoes and cook for 1 - 2 minutes. Add the spinach and let it wilt. Finally, mix in the gnocchi. If the sauce is too thick, add a bit of water.

- Slice the chicken breast.
- Serve the gnocchi in deep plates. Top with the sliced chicken.
- Grate over the Parmigiano Reggiano.
