Cooking Steps

Voorbereiden

  • Verwarm de oven voor op 220 graden.
  • Snipper de ui fijn. Halveer de courgette in de lengte en snijd in dunne halve maantjes. Snijd de paprika in reepjes.
  • Meng in een grote kom de courgette en paprika met het paprikapoeder en per persoon: 3/4 tl Mexicaanse kruiden (let op: pittig! Gebruik naar smaak), 1/4 el olijfolie, peper en zout.
Bakken en mengen

  • Verhit 1/4 el olijfolie per persoon in een koekenpan op middelhoog vuur. Bak de groenten 4 - 5 minuten.
  • Snijd de limoen in kwarten. Snijd de tomaat in kleine blokjes en hak de koriander fijn.
  • Meng in een kom de tomaat, ui, koriander en het sap van 1 limoenpartje per persoon (zie Tip). Breng op smaak met peper, zout en extra vierge olijfolie naar smaak.

Tip: Houd je niet van rauwe ui? Bak deze dan mee met de andere groenten.

Quesadilla's maken

  • Leg de tortilla's op een bakplaat met bakpapier.
  • Beleg de helft van de tortilla's met de gebakken groenten, geraspte kaas en kruidenkaasblokjes.
  • Vouw de tortilla's dubbel en druk de quesadilla's goed aan.
  • Herhaal dit met alle tortilla's. Bak de quesadilla's 6 - 8 minuten bovenin de oven.

  • Meng in een kleine kom de mayonaise met de zoet-pittige chilisaus.
  • Verdeel de quesadilla's over de borden.
  • Garneer met de eventueel overige limoenpartjes.
  • Serveer met de chilimayonaise en de pico de gallo.
