Cooking Steps

Voorbereiden

Verwarm de oven voor op 220 graden. Snijd de kastanjechampignons in kwarten. Snipper de ui. Pers de knoflook of snijd fijn.

Fruiten

Verhit 1/2 el roomboter per persoon in een soeppan met deksel op middelhoog vuur. Fruit de ui en knoflook 1 - 2 minuten.

Bakken

Voeg de champignons, knolselderij en BBQ rub toe en bak, afgedekt, 4 - 5 minuten. Voeg per persoon: 1 el roomboter en 1 el bloem toe. Bak 1 - 2 minuten.

Vulling afmaken

Verkruimel 1/4 boullionblokje per persoon boven de pan. Voeg het laurierblad, het rozemarijntakje, de sojasaus en 100 ml water per persoon toe (zie Tip). Roer goed door zodat de saus één geheel wordt. Breng op smaak met peper en zout en laat, onafgedekt, 4 - 5 minuten inkoken.

Tip: Let jij op je zoutinname? Voeg dan de helft van de sojasaus toe. Wie wil kan na het serveren naar smaak meer toevoegen.

Pastei maken

Haal het laurierblad en het rozemarijntakje uit de ragout. Verdeel de ragout over een ovenschaal. Verkruimel de geitenkaas erover. Bedek de bovenkant met het bladerdeeg en snijd het bladerdeeg kruislings in zodat er een ruitpatroon ontstaat. Bak 15 - 20 minuten in de oven, of tot het bladerdeeg gaar is en goudbruin kleurt.
