Zin in een burger, maar even geen vlees? Deze burger is gemaakt van champignons, rode biet en ui. Hij heeft een vlezige structuur en is daarmee een goede vegetarische vervanger van de klassieke hamburger. De zoete-aardappelpartjes doen er eigenlijk het langste over om te garen, maar kosten het minste werk, omdat je ze in het begin al in de oven doet!

Cooking Steps

Aardappel in de oven

Verwarm de oven voor op 200 graden. Was de zoete aardappel grondig en snijd in dunne partjes. Meng de partjes in een grote kom met 1 el olijfolie per persoon en breng op smaak met peper en zout. Leg de aardappelpartjes op een bakplaat met bakpapier en bak 30 – 35 minuten in de oven.

Meng ondertussen in een saladekom de witte balsamicoazijn met de extra vierge olijfolie en breng op smaak met peper en zout. Snijd de blaadjes van de verse munt grof.

Mengen

Snijd de tomaat in parten. Meng in de saladekom met de dressing en voeg de munt toe. Schep om, zodat de dressing goed in de tomaten kan trekken.

Bakken

Verhit in de laatste 10 minuten van de baktijd van de zoete-aardappelpartjes de overige olijfolie in een koekenpan op middelhoog vuur. Bak de vega-burger 3 – 4 minuten per kant, tot ze goudbruin zijn.

Bak ondertussen het hamburgerbroodje de laatste 5 minuten in de oven mee met de zoete-aardappelpartjes.

Serveren

Snijd de hamburgerbroodjes open. Verdeel een deel van de gemengde sla over de broodjes en leg de burger erop. Schep de rest van de sla om met de tomatensalade en serveer naast de burger. Schep de zoeteaardappelpartjes ernaast en serveer met de mayonaise.
