Bereid de kippenbouillon. Snijd het witte gedeelte van de bosui in stukken van ongeveer 3 cm lang. Halveer eventueel in de lengte als ze erg dik zijn. Snijd het groene gedeelte in dunne ringetjes en bewaar apart. Rasp de gember. Pers de knoflook of snijd fijn.

Tip: Wist je dat bosui vergeleken met andere groenten veel calcium bevat? Je vindt het ook in boerenkool en paksoi.

Verhit 1/2 el zonnebloemolie per persoon in een grote hapjespan met deksel op middelhoog vuur. Bak de knoflook, gember, en kippendijreepjes 1 - 2 minuten. Breng op smaak met peper en zout. Voeg het witte gedeelte van de bosui en de gesneden paddenstoelen toe en bak 3 - 5 minuten met het deksel op de pan. Halveer de komkommer in de lengte en snijd in halve maantjes van maximaal 1/2 cm dik.

Voeg de bouillon, de zoete Aziatische saus en de ketjap toe aan de grote hapjespan met de kip en de groenten. Voeg de udonnoedels toe en kook 2 - 4 minuten zonder deksel op laag vuur zodat de noedels langzaam loskomen. Voeg de laatste 2 minuten de komkommer toe. Breng op smaak met peper en zout.

Tip: Let jij op je zoutinname? Spoel de noedels dan voor gebruik goed af in een vergiet en/of laat de ketjap achterwege. Die kun je altijd na het serveren nog naar smaak toevoegen.
