Cooking Steps

  • Preheat the oven to 220°C.
  • Cut the baguette in half lengthways.
  • Finely chop the basil.
  • In a small bowl, mix the passata with the Italian herbs, basil, 1 tbsp extra virgin olive oil and salt and pepper to taste.

  • Cut the tomatoes in half.
  • Tear the mozzarella into small pieces.
  • Place the baguette on a parchment-lined baking sheet.
  • Spread the passata over the bread and top with the mozzarella and tomato.

  • Bake the bread in the oven for 6 - 8 minutes, or until the cheese has melted.
  • Garnish with the rest of the basil, then season with salt and pepper to taste.
  • Slice the bread and serve on a large plate or dish.
