Cooking Steps

Voorbereiden

  • Breng ruim water aan de kook in een pan met deksel. Schil de aardappelen en snijd in grove stukken. Kook de aardappelen, afgedekt, in 12 - 15 minuten gaar.
  • Kook de eieren 4 - 8 minuten mee in dezelfde pan (zie Tip).
  • Snijd ondertussen de ui in halve ringen.

Tip: Pas de kooktijd aan van de eieren afhankelijk van jouw voorkeur.

Jus maken

  • Verhit 1 el roomboter per persoon in een koekenpan op middellaag vuur. Bak de spitskool samen met de groene currykruiden 6 - 7 minuten. Haal uit de pan en bewaar apart.
  • Voeg aan dezelfde koekenpan 1/2 el roomboter per persoon toe en bak de ui 4 - 5 minuten op middellaag vuur.
  • Voeg de zoete Aziatische saus en 30 ml water per persoon toe en laat de saus nog 4 - 5 minuten zachtjes inkoken.
Puree maken

  • Giet ondertussen de eieren en aardappelen af, laat de eieren schrikken onder koud water en houd apart.
  • Stamp met een aardappelstamper de aardappelen met de kookroom tot een puree (zie Tip).
  • Meng de Chinese kool door de puree en breng op smaak met de sojasaus en witte miso (let op: zout! Gebruik naar smaak).
  • Breng op smaak met peper en zout.

Tip: Voeg de kookroom lepel voor lepel toe om te voorkomen dat de puree te waterig wordt.

Serveren

  • Pel de eieren en halveer ze.
  • Serveer de stamppot over de borden. Verdeel de saus eroverheen.
  • Serveer 1 ei per persoon naast de stamppot.
  • Garneer met de gefrituurde uitjes (zie Tip).

Tip: Voeg de gefrituurde uitjes pas vlak voor serveren toe zodat ze knapperig blijven.
