Deze stamppot bevat lekker veel groenten, die samen een spannende smaakcombinatie vormen: bitter, zoet en een klein beetje pittig. De gebakken amandelen geven het gerecht net die extra bite en de kip met citroentijm maakt het lekker zomers.

Voorbereiding

Was of schil de aardappelen (Frieslander) grondig en snijd in grove stukken. Schil de koolrabi en snijd deze ook in grove stukken. Ris de blaadjes van de takjes citroentijm. Wrijf de kipfilet in met de olijfolie en de tijmblaadjes en breng op smaak met peper en zout. Laat de kipfilet minimaal 5 minuten marineren.

Bereid ondertussen de bouillon in een pan met deksel voor de aardappelen en de koolrabi. Voeg de aardappelen en de koolrabi toe en kook, afgedekt, in 13 – 15 minuten gaar. Giet daarna af, bewaar een beetje van de bouillon en laat zonder deksel uitstomen.

Amandelen roosteren

Verhit ondertussen een koekenpan op hoog vuur en rooster het amandelschaafsel, zonder olie, goudbruin. Let goed op, het kan snel verbranden. Haal uit de pan en bewaar apart ter garnering van de stamppot.

Kip bakken

Verhit dezelfde koekenpan op middelhoog vuur en bak de gemarineerde kipfilet 2 – 3 minuten per kant. Verlaag het vuur en bak de kipfilet nog 4 – 5 minuten, of tot de kipfilet gaar is (zie tip).

Stamppot maken

Stamp de aardappelen en koolrabi fijn met een aardappelstamper en voeg de melk en een beetje van de achtergehouden bouillon toe om het smeuïg te maken. Scheur de spinazie, eventueel in delen, klein boven de pan. Roer door tot de spinazie grotendeels is geslonken en breng op smaak met peper en zout.

Serveer de stamppot met de tijmkip en garneer met het geroosterde amandelschaafsel.
