Cooking Steps

Snijd de tomaat in blokjes. Snijd de komkommer in dunne linten met een dunschiller of kaasschaaf. Snipper de rode ui.

Snijd ondertussen het tarwebroodje in blokjes van 1 cm. Verhit de zonnebloemolie in een koekenpan en bak de croutons in 6 - 8 minuten rondom bruin op hoog vuur. Breng goed op smaak met peper en zout. Haal uit de pan en bewaar apart.

Pers 1/4 van de citroen uit boven een kleine kom en snijd de overige citroen in partjes. Meng in een saladekom de kappertjes, rode ui, 1 el extra vierge olijfolie, 2 tl mosterd en het citroensap. Voeg de slamix, tomaat en komkommer toe aan de saladekom. Meng goed met de dressing en breng op smaak op peper en zout.

Verdeel de salade over diepe kommen. Garneer met de warmgerookte zalmsnippers en croutons. Serveer met de citroenpartjes.
