Cooking Steps

Noedels koken

  • Breng ruim water aan de kook in een pan.
  • Kook de noedels in 4 - 5 minuten beetgaar.
  • Bewaar wat van het kookvocht, giet af en spoel de noedels af onder koud water.
Tempeh bakken

  • Pers de knoflook of snijd fijn.
  • Verhit 1/4 el zonnebloemolie per persoon in een wok of hapjespan op hoog vuur en bak de knoflook met de champignon-roerbakmix 4 - 6 minuten.
  • Verhit ondertussen 1/4 el zonnebloemolie in een koekenpan op middelhoog vuur. 
  • Voeg zodra de olie goed heet is de tempehblokjes toe en bak 3 - 4 minuten. Blus af met 1/2 el water per persoon en bak nog 1 minuut.
Saus maken

  • Voeg de kokosmelk, pindakaas, sojasaus en sambal naar smaak toe aan de wok of hapjespan met groenten en meng goed. Laat de saus 1 - 2 minuten inkoken op middelhoog vuur.
  • Scheur de spinazie, eventueel in delen, klein boven de wok of hapjespan.
  • Voeg de noedels toe en meng goed door. Voeg eventueel wat van het kookvocht toe als het te droog wordt. Breng op smaak met peper en eventueel zout.
Serveren

  • Verdeel de noedels over kommen of diepe borden.
  • Serveer de crispy tempeh erbovenop.

Weetje: Wist je dat tempeh rijk is aan calcium en ijzer? Het bevat per 100 gram evenveel calcium als 1 glas melk en evenveel ijzer als 100 gram biefstuk!
