Cooking Steps

Verwarm de oven voor op 220 graden, bereid de bouillon en breng 400 ml water aan de kook in een pan met deksel voor de aardappelen (bildstar).

Was de aardappelen grondig en snijd in plakken van ½ cm dik. Kook de aardappelen, afgedekt, 12 - 15 minuten in de pan met deksel. Giet daarna af en laat zonder deksel uitstomen.

Snijd de prei.

Snijd ondertussen de prei in fijne ringen. Rasp de nootmuskaat met een fijne rasp.

Verhit een wok of hapjespan op middelhoog vuur en bak de spekblokjes 2 minuten. Voeg de prei toe en bak 3 minuten. Voeg de helft van de roomboter toe en laat smelten. Voeg de bloem toe en bak al roerende 1 minuut op middelmatig vuur.

Voeg de melk toe.

Voeg vervolgens de helft van de bouillon toe aan de wok of hapjespan en roer tot een glad mengsel. Herhaal deze handeling met de overige bouillon en voeg ook de melk toe, breng aan de kook en laat nog 1 minuut koken. Breng op smaak met 1 tl geraspte nootmuskaat per persoon, peper en zout.

Leg de kabeljauw erop.

Vet ondertussen een ovenschaal in met de overige roomboter. Schep de gekookte aardappelen in de ovenschaal, schenk de saus erover, leg de kabeljauw erop en bestrooi met peper en zout. Bak 10 minuten in de oven.

Verdeel de aardappel-preischotel met kabeljauw over de borden.
