Cooking Steps

  • Verwarm de oven voor op 180 graden.
  • Meng in een kom de côte de bœuf met 1 el olijfolie en de Mexicaanse kruidenmix. 
  • Snijd de rode peper en 2 knoflooktenen fijn. Meng in een andere kom de varkenshaaspuntjes met 20 ml ketjap, 1 el zonnebloemolie en de helft van de knoflook en rode peper. Herhaal dit voor de zalm. 
  • Rijg de varkenshaas aan de spiezen.
  • Dek alles af met aluminiumfolie en laat in de koelkast marineren tot gebruik.

  • Snijd de bieslook en bladpeterselie fijn en meng in een kleine kom met de roomboter, peper en zout.
  • Pers 2 knoflooktenen of snijd fijn. Verwijder de zaadlijsten van de groene peper. Snijd de sjalot, groene peper, bladpeterselie en koriander zeer fijn. Pers de limoen uit boven een kleine kom. Meng in de kleine kom de knoflook, sjalot, groene peper, bladpeterselie, koriander en het limoensap met 2 el extra vierge olijfolie, 1/2 el zwarte balsamicoazijn, peper en zout.
  • Bak de baguette 5 - 6 minuten in de oven.

  • Snijd de komkommer in blokjes. Verkruimel de feta.
  • Snijd met een scherp mes eerst de schil van de sinaasappel. Snijd vervolgens het vruchtvlees langs de velletjes los.
  • Meng in een saladekom de slamix, komkommer en sinaasappel met 2 el extra vierge olijfolie, 2 tl wittewijnazijn, 1 tl mosterd, peper en zout.
  • Garneer de salade met walnootstukjes en de helft van de feta.

  • Was de aardappelen en snijd ze in de breedte in hele dunne plakjes, zonder de plakjes helemaal los te snijden (zie Tip). 
  • Voeg de aardappelen toe aan een kom en besprenkel met 2 el olijfolie, peper en zout.
  • Ris de tijmblaadjes los boven de kom en meng goed. Wikkel elke hasselback-aardappel individueel in aluminiumfolie. 
  • Snijd de tomaten in dunne plakken en de paprika in kwarten. Verwijder de harde onderkant van de asperges, dit is ongeveer 2 cm.

Tip: Leg de aardappel tussen de stelen van 2 pollepels en snijd de aardappel tot aan de pollepel. Zo voorkom je dat je door de aardappel heen snijdt.

  • Zorg dat de barbecue goed op temperatuur is en de grill is ingevet.
  • Vind de baktijden in de tabel. Keer alles regelmatig om zodat het rondom gaar wordt.

Asperges & paprika 10 - 15 minuten
Hamburgers 4 - 5 minuten per kant
Varkenshaassaté 5 - 7 minuten
Zalmfilet 3 - 5 minuten
Côte de bœuf 2 - 3 minuten per kant
Kaas op de hamburgers 1 minuut op het eind

  • Verwarm de satésaus in 3 - 4 minuten in een steelpan op laag vuur. Serveer bij de varkenshaassaté.
  • Besprenkel de côte de bœuf met de chimichurri.
  • Leg de hamburgers op de broodjes en beleg met augurk, tomaat en whiskeysaus. 
  • Garneer de gegrilde groenten met de overige feta en het amandelschaafsel. 
  • Serveer met de aardappelen, zalm, baguette, zelfgemaakte kruidenboter en de salade.
