Cooking Steps

Voorbereiden

Kook 400 ml water per persoon voor de soep in een waterkoker of steelpan. Pers de knoflook of snijd fijn.

Tip: Wist je dat dit gerecht meer dan 250 gram groente bevat? Een van deze groenten is pompoen - rijk aan kalium en vitamine E en C. Samen draagt dat bij aan een sterke weerstand en een gezonde bloeddruk.

Groenten snijden

Snijd de wortel in plakken en de bosui in fijne ringen. Houd van het groene gedeelte 1 el per persoon apart voor de garnering.

Tip: Geen liefhebber van rauwe bosui? Kook dan in stap 3 alle bosui mee in de soep.

Bakken en koken

Verhit de olijfolie in een soeppan met deksel op hoog vuur. Voeg de knoflook, de wortel, de pompoenblokjes, het kerriepoeder en de overige bosui toe. Roerbak 2 minuten. Voeg vervolgens 300 ml kokend water per persoon toe, verkruimel 3/4 bouillonblokje per persoon boven de pan en breng afgedekt aan de kook. Laat de soep 14 - 16 minuten zachtjes koken.

Tip: Let jij op je zoutinname? Gebruik dan 1/2 bouillonblokje per persoon of kies voor natriumarme bouillon.

Ei koken

Breng ondertussen water aan de kook in een steelpan en kook het ei, afgedekt, in 6 – 8 minuten hard. Laat schrikken onder koud water. Pel het ei en snijd het doormidden.

Tip: Ei is, naast vette vis, een van de weinige ingrediënten die rijk zijn aan vitamine D. Deze vitamine krijgen veel mensen te weinig binnen, zeker in de winter met weinig zon.

Soep pureren

Verwarm ondertussen de platbroden 30 seconden per kant in een droge koekenpan op middelhoog vuur. Haal de soep van het vuur, voeg de pindakaas toe en pureer met een staafmixer. Voeg extra kokend water toe als je de soep wilt verdunnen. Breng op smaak met peper en zout.

Tip: Ben je een grote eter? Verwarm dan 2 platbroden per persoon. Voor extra knapperige platbroden besprenkel je ze met wat olijfolie en zout en bak je ze 3 - 4 minuten.

Verdeel de soep over de soepkommen, leg het ei in de soep en garneer met het achtergehouden groene deel van de bosui. Serveer met het platbrood.
