Apfelstrudel is a traditional pastry from Vienna. In this recipe, you'll fill the puff pastry with an apple-sultana filling and finish it off with icing sugar and home-made whipped cream!

- Preheat the oven to 200°C.
- Transfer the puff pastry to a parchment-lined baking sheet.
- Peel and core the apples, then slice them and transfer to a large bowl.
- Juice half of the lemon. Add the lemon juice to the apple slices and toss well to combine.
- In a bowl, combine 100g granulated sugar with the cinnamon, the flour, the raisins and the shaved almonds.
- Transfer this mixture to the apple and toss well.
- Spread the apple filling in a long strip over the centre of the pastry, leaving the edges free.
- Fold the long sides of the pastry over the apple filling, making sure the pastry overlaps. Press together the open ends, so as to seal the pastry.
- Turn the entire pastry over so that the seam is facing downwards.
- Use a fork to pierce the surface of the pastry several times.
- Bake the apfelstrudel in the oven for 30 - 35 minutes.
- Meanwhile, transfer the cream and 1 tbsp granulated sugar to a clean mixing bowl.
- Use a handheld mixer to whip the cream into stiff peaks (see Tip).
- Scatter the powdered sugar over the apfelstrudel and serve with the whipped cream alongside.
Tip: taste and add more sugar as preferred.
