Verwarm de oven voor op 200 graden. Schil de aardappelen en snijd in parten. Verhit de helft van de olijfolie in een hapjespan met deksel en bak de aardappelen 25 – 30 minuten, afgedekt, op middelhoog vuur. Haal na 20 minuten de deksel van de pan.

Snijd ondertussen de rode ui in halve ringen. Verhit de overige olijfolie in een koekenpan en fruit de rode ui 4 – 6 minuten op laag vuur of tot hij de gewenste garing heeft. Haal uit de pan en bewaar apart in een kom.

Snijd ondertussen de helft van de vleestomaat in plakken en de andere helft klein. Snijd de botersla grof en meng met de kleingesneden tomaat in een saladekom. Besprenkel met de extra vierge olijfolie en zwarte balsamicoazijn. Breng op smaak met peper en zout.

Verhit de zonnebloemolie in dezelfde koekenpan en bak de gekruide kipburgers 8 – 10 minuten op middelhoog vuur, of tot ze gaar zijn. Keer regelmatig om. Bak ondertussen de mini-hamburgerbollen 4 – 5 minuten in de oven.

Verdeel de mini-hamburgerbollen over de borden. Besmeer de onderkant met een laagje mosterd en beleg met wat sla, een plakje tomaat, wat rode ui en een kipburger en bestrooi met de geraspte cheddar.

Serveer de burgers met de gebakken aardappeltjes en de overige salade.
