Italiaanse aardappelschotel met rode pesto en hazelnoten

De schil van aardappel kun je gewoon eten. Als je aardappelen goed wast en ze dan kookt in ruim water, krijg je een heel smaakvol geheel. Om je nog meer tijd te besparen hebben we de mix van courgette, gele peen, rode ui en broccoli alvast voorgesneden!

Cooking Steps

Kook 250 ml water per persoon in een pan met deksel voor de aardappelen (nicola). Was de aardappelen grondig en snijd in parten. Kook de aardappelen, afgedekt, 10 minuten. Giet daarna af en laat zonder deksel uitstomen.

Bak de groenten en aardappelpartjes.

Verhit ondertussen de olijfolie in een wok of hapjespan op middelhoog vuur en roerbak de Italiaanse groentemix met de oregano 3 – 4 minuten. Voeg de aardappelen toe en roerbak nog 5 minuten mee. Voeg daarna de rode pesto en de helft van de grana padano toe en roer totdat de kaas gesmolten is. Breng op smaak met peper en zout.

Hak ondertussen de hazelnoten grof.

Serveer de maaltijd, eet smakelijk!

Verdeel de aardappelschotel over de borden, bestrooi met de overige grana padano en garneer met de hazelnoten.
